Chablis:
The appellation of Chablis, the most famous wines of Yonne, generously extends on both sides of the Serein valley.
There are four Chablis wines, in ascending order of quality:
– 1-Petit Chablis
– 2-Chablis
– 3-Chablis 1er Cru
– 4-Chablis Grand Cru
Halfway between Beaune and Paris, the Chablis wine region extends over twenty villages. In the midst of the valleys and forested peaks, the vineyard lines and hillsides borders the beautiful valley of the Serein. The vines rooted in clay-limestone soil gives Chablis wines the characteristic minerals aromas, for your pleasure!
Here, Chardonnay occupies a special place: it is the grape used for all white wines. This grape gives world-renowned names; the most famous is the Chablis Grand Cru with the golden-green dress, perfectly balanced between the bright, dry and acidity.
Chablis is the noble door of Burgundy and its wines witnesses revived to great wine country developed in the region since the beginning of the Middle Ages, including the monastic orders: Pontigny had its vineyards in Chablis.
